Manual harvesting and maceration of approximately 12 days.
Later, the fermentation takes place in stainless steel tanks at a controlled temperature. After this fermentation, aging is extended for 12 months in oak barrels, mainly American, although it is supplemented with a proportion of French. Finally, it completes its aging for a minimum period of 6 months in the bottle.
Cherry red in color, intense and lively, with violet flashes.
Clean and bright. The nose is perfumed and notes of fruit stand out on a background of toasted wood and soft aromas of vanilla, coconut and spices. In the mouth it has a pleasant finish reminiscent of red and toasted fruits.
Azpilicueta has its origin in the vineyards of Fuenmayor, where we work with more than 800 hectares.
This vineyard is diverse in topography, altitudes, soils, and orientations, creating microclimates and unique expressions of the grapes, which are selected each harvest. Each plot is monitored, from pruning to maturity. Most Azpilicueta reds are a blend of Tempranillo, Graciano and Mazuelo, a blend that brings typicality, aromas, acidity, and structure, making them perfect wines for aging.
Ideal with cold meats, rice dishes, vegetables, mushrooms, white and red meats.
